Following the ending of the Douglas County Outlaws, the Umpqua Valley Knights under Bion Mills and Southwestern Oregon Raiders under Rob Castleman were spawned as the Knights moved south to Roseburg, and the Raiders set up shop to the west in Coos Bay.  Players and coaches would split between the two teams as former Outlaw Castleman went to the Raiders and future Portland Monarchs owner Heath Wharton became a Knight among others.  Umpqua would take the head-to-heads against the Raiders in 2003 during a 3-7 campaign to start the franchise with Wharton taking top Oregon Football League defensive honors.

Umpqua would tick up in the standings with a 4-6 season losing in a tight playoff loss to Klamath 6-0 to end the season that featured a 3-game win streak that began with a third win over the rival Raiders.

2005 would be a rough outing with the lone victory coming in a 22-21 escape against the Coyotes.  The rival Raiders would finally notch wins over the Knights in their two-game set.

The OFL expanded in 2006 with an increase in competition as the Monarchs debuted along with former nine-man champions Oregon Outlaws.  Heath Wharton started the Monarchs and many of the northern-area players opted to remain with Salem.  An 0-7 start to the season was salvaged with the Knights finding their offense in the final two games putting up more points in both games than the previous seven combined.

The 2007 team was bolstered by former Oregon Duck and NFL training camp Baltimore Raven Robin Kneble and for the next four seasons, Kneble would be one of the top trench warriors in Pacific Northwest.

At the end of the 2009 season, some of the Knights and former Knights along with others in the Umpqua Valley area played the Southern Oregon Renegades as the "Umpqua Valley All Stars" but were not an official part of the Umpqua Valley Knights during the September bye-week game of the Renegades North American Football League season.

The 2010 team would be the best ever put out by Umpqua, and it almost didn't happen as owner Bion Mills was considering making his exit from semi-pro football.  But, he stuck it out one more season, and together with Kneble and Company, the Knights put together an 8-3 season and first-ever appearance in the Oregon League championship.  Unfortunately for Umpqua, this was the era of the Portland Monarchs, and the OFL kings would notch their third win of the season against the Knights and take home their third-consecutive OFL Crown.  But, Kneble's impression was not lost as he was named the Greater Northwest Regional Player of the Year and Oregon League MVP over the Monarchs quarterback and record-setter Russell Schneider.  Coach Mills would be named Greater Northwest Coach of the Year for the massive turnaround from a 2-6 team in 2009 to an 8-5 finish in 2010.  The fifth loss, came in the post-season when the Knights would take on the collegians at Linfield College and members of the second and third teams.  Twelve members would earn all-region status in 2010, the most for the franchise in it's eight seasons.

The Knights would shut down as Bion Mills took over the Riddle High School program and the Southern Oregon Renegades, formed in 2008 took over the south Oregon region and added James Snyder, John Jones and other former Knights to it's ranks.
