Created in 2022 for entry into the Gridiron Developmental League, the Knights struggled to find footing in the Tacoma-heavy league being dominated by the West Sound Rebels and Washington Warriors.  Will Conrad came to the Knights as head coach after holding the same position with the Tacoma Sabers in 2021.

The Knights would split wins with the Sabers, and a 16-13 win over the Everett Royals allowed the 3-5 Knights to to back into a playoff rematch with the Rebels for better or worse.  It was only "slightly" better from the previous game as the Rebels won back-to-back games over Grit City by a combined 100-0 enroute to a GDFL title.

With the Sabers shutting down after 2022, Grit City looked to improve in 2023 with an influx of personnel from the now defunct Tacoma team.  It was also announced that the Warriors would not take the field in 2023 further bolstering the lineup but, the Rebels were still ahead of the curve having gained some Warrior talent as well. The Knights suffered a crushing defeat at the hands of the South Lane Buzzards where the offensive firepower disappeared in the final two games of the season.

On the bright side for the Knights, Stefan Branham earned GNFA Player of the Year honors as the top multi-threat player in the run, pass and return game for Grit City.

In October 2023 it was announced the Rebels would merge with the Knights for 2024, making Grit City the strongest team in Tacoma while also moving to the newly created West Coast Pacific Minor Football League for 2024.

The Knights under new head coach Kiki Williams entered 2024 as a favorite to win the WCPML title, but they would have a tough opponent to the south in the Portland Raiders as well as the improving I-5 Cobras.  The Cobras would put up the stiffest challenge in Week 4, then in Week 5, a cross-county rivalry with the Sound Sound Nighthawks got heated and officials ended the game in the third quarter with Grit City nursing a 10-7 lead.   After getting to 6-0, back-to-back game cancellations hit as one team folded mid-season and the other failed to make it on the field at all in 2024.  That layoff halted any momentum leading into the Portland game, and the Raiders won 32-21 taking the inside track to homefield advantage.  The Knights would win out taking two playoff wins and a rematch with Portland to claim the inaugural league championship.

Head Coach Kiki Williams would be named coach of the year by the league, followed by a National Coach of the Year award from SemiPro Gameday.  Ms. Williams became the first known female head coach to win a semi-pro football championship and Coach of the Year award at the National level.  Kiki would retire following the season with assistant and former Washington Warriors head coach Tutu Tamaalevea taking over for 2025.  Defensive coordinator Andre Bonaparte would leave to build his own team, the King County Jetts.
